This fruity cava has fine, light bubbles that combine extraordinarily well with fatty foods, such as Bluefin Tuna. Recommended for a perfect pairing with any type of fish, but especially Bluefin Tuna. Serve at 5-6ºC.
HARVEST: Manual and mechanical. Macabeo: beginning of September. Xarel·lo: mid-September. Parellada: first week of October.
FERMENTATION: 1st fermentation in stainless steel tanks at a controlled temperature of 14-16ºC. 2nd fermentation in bottle using the Traditional Method.
AGEING: Average aging of 18 months on its lees.
TASTING NOTES: Pleasant and fresh entry, with light notes of white fruit combined with the tastes of nuts and pastries from the aging on lees. The carbonation is very fine thanks to its integration due to the aging. Coupage Blue Fin de Vallformosa has a volume in the mouth that gives us creaminess and elegance, with a long and pleasant aftertaste with hints of fruit and aniseed notes.
