Breeding
Three and a half years in French oak Bordeaux barrels, half new and half used, with subsequent blending to finish its refinement during a long stay in bottles.
Vineyard
Tempranillo from old vines trained in a goblet pattern, with an average age of 70 years, some of them planted “al cuadro” or in a real frame just after the phylloxera invasion, where vines of old varieties still survive. They occupy clay-limestone terraces at the foot of the Sierra de Toloño facing south, at high altitude, with a cool climate, in the Sonsierra region (San Vicente and surrounding villages). The Garnacha comes from 90-year-old vineyards planted in the Cárdenas area, in Alto Najerilla. They are also located at a high altitude, on clay-ferrous terraces facing north.
Vintage
Manual and staggered during the last week of September and the first week of October.
Elaboration
Each variety and site were fermented separately in steel tanks, always with the grape's own yeasts and with spontaneous malolactic fermentation. Normal fermentation temperatures (25ºC), with short and very respectful macerations.
