Vineyard
Located in Cárdenas, at an altitude of between 595 and 620 metres, on ferrous clay soil with conglomerate rock. It is a north-facing slope with a gradient of around 20%. At the top it forms terraces following the contour lines to prevent erosion. It is a plot of 0.8747 hectares with around 4,000 old vines. Part of it was planted in 1912 and is a real frame of 1.60 x 1.60. The rest of the plot, planted in 1918, is a French-style plantation in a rectangle of 2m x 1.40m.
Vintage
Manual harvest on October 14, 2021.
Elaboration
Fermentation takes place in a concrete tank with a capacity of 5,000 litres, sufficient for the entire production of the vineyard. The vatting is done by gravity: 15% of whole bunches are placed at the bottom, without destemming, and then the tank is filled with destemmed but uncrushed grapes, maintaining the integrity of the berries. Fermentation is spontaneous with the vineyard's own yeasts and maceration with the skins during this process lasts 15 days in total.
